Fancy Egg Sandwiches

Today was the sort of day where Harry refuses to eat something he normally loves. In this case, it was egg. In such dire circumstances, I find it necessary to bring out Mr Sandwich Man. He is a very friendly sort of a chap and guarantees eating success in these highchair parts.
Sometimes we just need to surprise them, it’s the little things.

Ingredients
- 4 slices of wholemeal bread
- ¼ avocado
- 2 large hard boiled eggs, peeled and mashed
- 1 tbs mayonaise
- Sprinkle of flat leaf parsley
- 1 tsp fresh lemon juice
- ½ tbs whole grain mustard
- Sprinkle of finely chopped tarragon
- Salt and pepper to taste
Method
Step 1
Combine the eggs, mayo, parsley, and lemon juice in a bowl. Fork mash until the mixture is evenly combined.

Step 2
Remove one tablespoon full of egg mixture for your toddler. Spread some avocado on one slice of bread and the egg mixture on the other - serve to your toddler. -
Step 3
Add the mustard, tarragon and salt and pepper to the remaining egg mix. Stir to combine. -
Step 4
Spread mixture onto your bread and top with slices of avocado - this one's for you. -
