Sushi Sandwiches
The new school year has begun and parents are sending their little ones off to day care, preschool or school with the healthiest of healthy packed lunches, hoping they will eat and enjoy all its yummy goodness. Finding the right balance of nutrients, flavour, fun and even some tasty treats is the key to ensuring your kids enjoy their school lunchbox and have the energy to learn, grow and of course play. Sushi sandwiches are a wonderful (simple) idea for when sandwiches become a tad ho-hum.

Ingredients
- 4 slices high-top bread
- 2 tbsp whole-egg mayonnaise
- 95g tin tuna in springwater, drained
- ½ avocado, sliced
- ½ medium carrot, grated
Method
Step 1
To prepare the bread, cut off the crusts and place the slices on a chopping board. Flatten using a rolling pin. -
Step 2
Spread mayonnaise over one side of each bread slice. -
Step 3
Leaving a 1cm gap from the edge, place a quarter of the avocado slices in a line along the bread (parallel to the short edge). Do the same with the tuna and grated carrot. -
Step 4
Once the fillings are arranged, roll the bread slices up 'sushi style'. Seal shut with extra mayo if required. Cut each roll into two to three rounds, and serve. -
