Ricotta and Caramelised Onion Dip

Have a look at our post on why we love dips so much and why dips are great for kids. This is one of our favourites, a nice creamy dip with the irresistible sweetness from caramelised onions. Harry loves this one on its own, dolloped on pizza, and in sandwiches.
Nutrition Note: Try using ricotta in dips as a lighter and fresher tasting alternative to sour cream.

Ingredients
- 1 brown onion, finely chopped
- 1 tbsp pure maple syrup
- 3/4 cup fresh ricotta
- 1/4 cup finely grated parmesan
- 1 tbsp extra virgin olive oil
Method
Step 1
Heat oil in a frying pan over medium/low. Add the onions and sauté for 10 minutes or until sticky. Add the maple syrup and stir, allowing to caramelise for another 5 minutes. -
Step 2
In a bowl, combine the onion mixture with the ricotta and parmesan. -
Step 3
This dip will last 2 - 3 days in the fridge. -

Could you use honey instead of maple syrup? We don’t eat maple syrup usually, would be a waste for 1 tbsp!!! Thank you
