Tomato & Herb Quinoa Salad

Salad is a wonderful way to get your children eating raw vegetables. Combining the raw veggies with the goodness of quinoa and you are onto a serious winner. My sister is vegan and she came up with this salad (minus the feta), she made a huge batch and didn’t have many leftovers as Harry and I devoured it. The herbs and vegetables used in this salad are just the start, you can use whatever herbs your family likes and are used to. When exposed to herbs early babies and toddlers are often much more accepting of stronger flavours found in typical family meals.

Fussy Eating Tip: Harry loves the crunching noise he makes when eating raw vegetables, I play on this and have lots of fun with it, keeping him interested and forming positive associations to eating vegetables. If you have trouble with feeding salads and things to your kids, you could try serving it with a lovely homemade dip.

Nutrition Note:  Remember to serve a variety of vegetables to your children in a variety of ways (raw, steamed, roasted) to help them become familiar with vegetables and receive all the nutrients they have to offer.

Ingredients

  • 2 cups cooked white quinoa, cooled
  • 2 tomatoes, finely chopped or 1 cup cherry tomatoes, halved
  • 1/2 capsicum, finely chopped
  • 1 cob of corn, steamed, kernels removed
  • 1 avocado, flesh diced
  • 1/4 cup fresh herbs (I used coriander, parsley and mint)
  • 1/2 cup fetta (optional)
  • 1 x 400g tin chickpeas, drained and rinsed
  • 3 tbsp fresh lemon juice
  • Tip: add some minced garlic when cooking your quinoa for added flavour.

Method

Step 1

Cook your quinoa according to pack directions. You need around 1 - 2 cups. Boil your corn for around 2 minutes and chop off the kernels. -

Step 2

Combine all the ingredients and toss together. Use clean fingers to mash the avocado and feta into the salad. The lemon juice, avocado and feta will create more than enough salad 'dressing' to make this exceptionally tasty. Serve as a light main meal or as a side dish. -

Step 3

Note: If you are making this for later, leave the avocado, feta and lemon juice aside until you are ready to serve. -

    Hi, this looks great! Ive never tried quinoa before and am keen to.. do you think some tuna would go well flaked through this? I no the recipe is vegetarian but im not lol

    What age would you recommend this salad for? My girls are 15 months and although id like to introduce them to raw salad ingredients, I think the whole thing would end up on the floor 🙁

      Perhaps a nice coleslaw or some veggie sticks and dips would be another option? Ax
