Pick ‘n’ Mix Chicken and Corn Risoni
Sometimes a baby’s taste preferences are very clear right from the very start of introducing solids. Our pick ‘n’ mix puree recipes are perfect for helping to encourage variety and acceptance of new tastes and flavours. Using pumpkin, carrot or sweet potato keeps this puree smooth and sweet tasting, whereas the peas and broccoli make the puree more textured and fibrous – a mix of pumpkin and broccoli was always George’s favourite as a baby.
Nutrition Note: if you need a wheat and gluten free option, combine 2 tablespoons of cooked quinoa or brown rice in place of the risoni when pureeing the mixture.

Ingredients
- 100g chicken breast or tenderloin, chopped
- 1 cob of corn, kernels trimmed
- 2 tbsp risoni
- 300 ml of water
- Pick 'n' mix options (choose one of the following ingredients):
- - 1 cup pumpkin, peeled and chopped
- - 1 cup sweet potato, peeled and chopped
- - 1 cup zucchini, diced
- - 1 cup frozen baby peas
- - 1 cup carrot, peeled and chopped
Method
Step 1
Combine all the ingredients in a small saucepan and bring to the boil. -
Step 2
Reduce the heat and simmer uncovered for 10 minutes or until the chicken is cooked through and the pasta is tender. -
Step 3
Blend the mixture until you reach the desired consistency. -

I check your site every week when looking for meal planning ideas. Thanks so much for sharing. Just wondered if this would freeze ok? You probably get asked that question all the time – would it maybe be easier to pop a little “freezable” logo at the top of each recipe??? Just a thought!

This might be a really silly question, but should I drain it before blending??
