Ham and cheese frozen sandwich
Are the kids heading back to school and you are looking for new and inspiring things to pack in their lunchbox? Freeze ahead or “frozen sandwiches” are a great way to be prepared and helps to avoid the more expensive canteen lunch option. The trick is to layer the ingredients correctly to avoid a soggy sandwich. Use a spread such as mayo, oil spread or butter to stop the sandwich filling from making the bread too moist, and avoiding water based ingredients such as lettuce which don’t freeze well.

- 4 slices multigrain bread
- 1 tbsp mayonnaise, butter or Alfa One Spread
- 4 slices ham
- 2 slices cheddar cheese
Method
Step 1
Spread all sliced of the bread with the mayonnaise or spread – this will keep the bread from going soggy -
Step 2
Layer ham and cheese on the bread. Spread any other condiments between the layers of ham and cheese -
Step 3
Wrap sandwiches in freezer proof plastic, place in a freezer proof bag, label and freeze. -

Do you pack it in the lunch box straight from the freezer or defrost the day / night before?

Straight from the freezer is fine. Perhaps do a test yourself and see if it is defrosted in time for lunch? That way you can be sure you aren’t sending a half frozen sandwich – nothing worse! Ax

I use the snaplock sandwich bags and they work fine. We do ham and cheese although jam works fine too and is often requested by my kiddos. Sometimes I’ll pop 1/4 avocado into their lunch box and they love to add it to the ham and cheese. Works really well at getting my preppie and grade 1 kids to be more independent with getting ready and makes them feel good to pack their own lunches. I love the convenience with a baby to look after as well.

Cling wrap is perfectly fine 🙂
Mayo doesn’t freeze well it can seperate and go a bit yuck we use relish instead and I like to use grated cheese as I find it defrosts better than sliced

Can you throw these straight on a sandwich press for a quick toastie? Or do they have to thaw first?
