I was walking through the deli today and saw those packets of dried banana chips. Mmm must try these, minus the sugar coating. I remember making them for the kids I nannied, though they had a fancy drying machine. So after a bit of experimenting I found I could make my own, using the oven on a low heat over a long period of time. Not something you want to try when you are feeling impatient, save them for a nice lazy afternoon at home.

I can’t wait to give these to Harry tomorrow. I think he will love them.

Tip: These are best eaten fresh when they are crisp. Store in an airtight container as they will turn chewy – best not to give the chewy ones to kids.

Ingredients

  • 1 banana
  • Lemon juice (to coat)
  • Honey (to coat)

Method

Step 1

Preheat the oven to between 80-100 degrees celsius. -

Step 2

Slice the banana into 2-3mm thick pieces and place on a oven-proof tray lined with baking paper. -

Step 3

Brush each slice with lemon or honey (I did half/half). Place in the oven for around 2hours. Test the banana's periodically to check. -

Step 4

Remove the bananas from the oven. Don't worry if they aren't completely crisp, this will happen in the cooling process. -
