Place the almonds in the bowl of a food processor and process until a fine crumb forms. Add the dates, apricots, cinnamon, tahini, honey and ¾ of the coconut. - Roll into small balls, roll in the coconut and place in the fridge for 30 minutes. - Storage: store in an airtight container in the fridge for 2 days or freeze for up to 1 month. -Ingredients
