Chicken, Beetroot & Broccoli

Chicken, beetroot and broccoli is a simple yet tasty combination for the young babies. Beetroot can be an easy vegetable to skip when starting solids due to the possible mess that may result, but it adds a yummy sweetness that most babies love. Oh and they will probably gobble it all up so fast there will be very little mess to clean up. So try it. I dare you 😉
Tip#1: We recommend you try roasting fresh beetroot. It can take a bit of extra time to prepare but it’s simple to do and freezes well, so well worth the effort. Just cook up extra and enjoy on your own sandwiches and in salads.
Tip#2: For more texture stir through some cooked quinoa, couscous, pasta or rice.
Nutrition Note: Beetroot, especially their green leafy stems are high in folate. For older children chop up beetroot stems and leaves and try adding them to salads or stirfrys.

Ingredients
- 100g chicken breast or tenderloin, chopped
- 3/4 cup broccoli florets
- 1 fresh beetroot, roasted* (or 1/2 cup tinned)
- 1/2 cup water
Method
Step 1
*To roast beetroot: place fresh beetroot on a chopping board and remove the leaves and stems (leaving around 2cms of stem attached). Wash the beetroot under cold running water and gently rub the skin to remove dirt. Wrap each beetroot in foil to retain nutrients and bake in an oven set at 180oC for around 45-60 minutes. Peel away skin. -
Step 2
Steam chicken and broccoli in a steamer basket over boiling water and steam for 6-8 minutes or until chicken is cooked though and broccoli is soft. -
Step 3
Combine the chicken and broccoli with the beetroot and water and puree until desired consistency is reached, adding more water if needed. -

This turned out great! My 8 month old devoured it. I’ve never roasted my own beetroot before but it was so easy! It was also nice to have some baby food that wasn’t orange from either having carrot, pumpkin or sweet potato in it. Lol

If adding tinned beetroot do you just add at the blending stage 🙂

I have tosay i was nervous making it but It turn out really tasty , my kid loves it, she ‘s picky eater but this one she eat, i am so glad
