Carrot Cookies

I am always on the hunt for a sweet little snack for Harry that is good for him. I have come up with these little carrot and fruit cookies and he loves them, particularly when we are out and about in the pram and he needs something to snack on. They freeze really well so are perfect for travelling lunch boxes. When buying the apricots, coconut and sultanas try and pick the brands that don’t contain any sulphur, check your ingredients list, they like to hide that little nasty in most dried fruit.
Nutrition Note: Carrots are high in beta-carotene, an antioxidant and provitamin, important for healthy eyesight – even seeing in the dark!

Ingredients
- ½ cup white plain flour
- ½ cup wholemeal plain flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- ¾ cup rolled oats
- 1 cup carrot, finely grated
- ¼ cup sultanas
- ¼ cup apricots, finely chopped
- 2 tbsp desiccated coconut
- 1 tbsp chia seeds (optional)
- ½ cup apple puree/sauce
- ¼ cup olive oil or vegetable oil
Method
Step 1
Preheat oven to 180°C. Line a baking tray with baking paper. -
Step 2
Sift flours, baking powder and spices into a bowl. -
Step 3
Stir in oats, carrot, sultanas, apricots, coconut, chia seeds and apple puree. -
Step 4
Stir through the oil until just combined. Take tablespoons full of mixture and roll into balls, place on the baking tray. Continue until you have finished the mixture. -
Step 5
Gently flatten each ball of mixture. Bake for 20 minutes or until slightly golden. -
Step 6
Keep in airtight container for up to 1 week. -

Where do you get apple puree/sauce from?

Hi again, I make my own apple puree otherwise you can buy the baby food puree in baby food section or the sauce in the condiment section of most supermarkets (near the mint sauces etc.) I hope that helps. Ax
Apple Puree: Peel, core and slice an apple and steam until soft then puree, or stew in saucepan with a small amount of water until soft and pulpy. Process using a stick blender until silky smooth.

We are loving these cookies!! They are so moreish it’s hard not to eat them all in one sitting. Perfect for snacks. I made ours without coconut because I couldn’t find coconut without Preservative 220. Can’t wait to try them with coconut when I find some though. But still incredibly delicious! Mmm 🙂

Mine don’t look as good. Only had shredded coconut and one minute oats. What is the consistency of the cooked biscuit supposed to be? Soft or crunchy? Mine seem to take longer than 20 mins.. Taste test by my toddler when they’re cooked will tell I guess. Love your healthy recipes, inspires me to try new things and encourage my toddler to try new things.

I made mine gluten free. I substituted quinoa flour for the wheat flour and quinoa flakes for the oats.

Are they meant to be soft or crunchy? My 17mo won’t eat soft cookies, only crunchy ones for some reason….??

Hi Alison, they are on the softer side. Perhaps you could shape them really small and cook lower for longer to get a bit more crunch happening? Ax

Perhaps make smaller cookies? Also you can try turning down the heat and cooking slower for longer. You can try and substitute but I haven’t tried this myself so I can’t say if it works or not 🙂 Ax

just made these with a few added extras: pepitas and choc chips! I also just whizzed it all up finely in the food processor and used 3 very small apples whizzed instead of puree. Super yummy!

These are yum! And super easy for a non-baker like me. Plus 1 year old + dad (+ me!) LOVE them. Didn’t have coconut so substituted coconut oil instead of veg oil and it worked really well. Also used some leftover rice cereal instead of plain flour to boost the iron and use up some of those half-used packets from when bub was small. I think these will become a regular in our house 🙂

I made these this morning but in my absent-minded-ness I forgot the key ingredient…carrot! Only realised after I’d almost finished putting the balls on the baking tray. In any case I ended up with yummy fruit & chia seed cookies that my little boy thought were yummy! Will def make it again but with the carrots next time 😉

I made these tonight and as I had no apple sauce/purée, and was feeling lazy, I substituted a mashed banana as we had a few that were desperate to be used. This worked really well and the cookies taste fantastic!
I also made them a bit more “adult” by chucking in some crushed up walnuts.

I rarely comment but OMG these were so good that I was compelled. Thank you. I just made a batch adding dried cranberries and a seed mix. Totally yum and so nutritious. It’s hard to find a healthy, tasty toddler snack like these. They should be in the freezer in all major supermarkets 🙂

I made these a few days ago- what can I add or change to make them less dry? I used quick oats instead off traditional oats- would this have made a difference ? If I add SR flour instead of plain flour would this make them less doughy?

The biscuits in the picture look raw? Mine are dry and taste strongly of olive oil and I put in less than it said. Only cooked them for 18 mins too.

I have been trying out a few recipes from the site as we were getting into a snack rut. My 2 year old is on her second one of these for afternoon tea. I love any recipes that have sneaky veg in them as she is currently very selective about eating them. Thanks for the recipe!
