Carrot, Apple and Fennel Coleslaw
A modern, fresh twist on a summer picnic favourite, our super simple coleslaw includes apple and fennel. A winning combination your family is sure to love. It takes only minutes to make, especially if you are using a food processor or Thermomix, so there’s no need to buy the commercial varieties – many of which include added preservatives and a lack of variety of vegetables.
Nutrition Note: Enjoying fruits and vegetables raw maximises their vitamin C and folate content.

Ingredients
- 2 carrots
- 1 apple
- ½ a medium fennel bulb
- 1 small red onion, peeled,
- small handful of parsley leaves, finely chopped
- juice of 1 lemon
- 2 tbsp mayonnaise
- 1 heaped tsp of Dijon mustard
- pepper to taste
Method
Step 1
Finely slice the carrots, apple, fennel and onion, or alternatively use a food processor to slice the fennel and onion and julienne the carrots and apple, then place in a large bowl. -
Step 2
Place the lemon juice, mayonnaise and Dijon mustard in a small bowl and mix to combine. -
Step 3
Add the dressing to the coleslaw along with the parsley and stir to combine. -
Step 4
Serve straight away, alongside grilled meat, chicken or fish, or place in the fridge until ready to use. -
Step 5
Storage: store in the fridge and use within a day to prevent the vegetables going too soft. -
