Cheesy Carrot and Broccoli Pasta

We are leaving Singapore in a week, so my stockpile of frozen baby food is looking pretty sad. I have been sticking to sandwiches and using up fresh food for lunch. This was what Harry had today, and like most of the pasta dishes he happily fed himself until it was all gone, and not a single spiral made it onto the floor.
Nutrition Note: If your baby or toddler loves pasta, make the most of it by stirring through a variety of veggies. Fussy eaters may be more likely to give them a try when they’re served alongside one of their favourite foods.

Ingredients
- 1 tbs olive oil
- ¼ cup grated carrot
- ¼ cup broccoli florets, broken into small pieces
- ¼ cup grated cheese
- 2 tbs leek, finely sliced
- 1 cup cooked pasta spirals (I used gluten free brown pasta)
Method
Step 1
Heat the oil in a small saucepan, add the leek and grated carrot, and sauté for a few minutes. Add the broccoli, pop on the lid and cook for a minute or until tender -
Step 2
Lower the heat. Add the cooked pasta and stir through the cheese. Once melted remove from heat -
Step 3
Allow to cool just enough so the cheese binds the mixture together slightly. You can then mash and spoon-feed for younger babies or let the older ones feed themselves. -
