Tuna Melt Fritters

Oh fritters… they are so simple, easy and kids just love them. I have been making these tuna melt fritters for a while but completely forgot to post them. Cruel I know. These are delicious, I can’t stand around and watch Harry eating them, so I double the batch and have them for lunch with some avocado, rocket and tomato. Nom nom nom.

Tip: These are similar to my pick-n-mix fritters, so I will often halve that mixture and do half tuna melts and half ordinary fritters. They are all great to have in the freezer.

Ingredients

  • 1 x 125g can of creamed corn
  • 1 x 125g can corn kernels
  • 1 x 95 gram tuna (or salmon)
  • ½ cup cheese, grated
  • 1¼ cups plain flour
  • ½ cup milk
  • 2 eggs
  • 1 tsp baking powder
  • Olive oil to fry

Method

Step 1

Whisk milk and eggs together -

Step 2

Add all other ingredients and mix until you have a consistent batter -

Step 3

Heat the oil in a fry pan over medium, dollop tablespoons full of batter into the pan and cook each side for a few minutes until golden -

    Yum! I reckon my 8 month old would love these 🙂
    He just tried a tiny corner of a pancake yesterday and ate it well, so I think these would be a hit! Thanks for the idea!

      Hi, no I haven’t tried them with gluten free flour, I tried them with whole meal and they were good, just a tad less fluffy. I don’t see why they wouldn’t work? If anything they might just be slightly more dense. So maybe not quite as much flour (1 cup plain gluten free) or a bit more milk (3/4 cup)? You might have to play around with the consistency.

    These are another great success! I was frying them in batches with little Miss 11 Months watching on, so I gave her a bit of the coolest one. She then sat there going “Ta! Ta!” until I gave her more, and is now sat in the highchair going “mmmmm!”

    The recipes makes loads too, I might even freeze some for later. Fantastic!

      I always freeze a big batch of these and the pick ‘n’ mix fritters, they are so good to have for a quick snack or to bulk up a meal.

    A success with my toddler!

    This makes quite a large batch, so just wondering how you go about freezing them. Would you put the batter in ice cubes to freeze and then cook from scratch, or cook the whole lot up and freeze them ready-made?

      Hi Rachel, a success! Yesssss. So happy.
      I cook up the whole lot, then individually wrap in plastic, then pop them all in a freezer proof glad bag. So convenient to just pull them out when I need.

    And do u sift ur flour and baking powder when u put it in the bowl. And do u use oil even if u have a non stick fry pan? So excited to cook sth new!!

      Hi Sophie, you can sift it when you put it in the bowl, and I do use a little brush of olive oil but you don’t have to if you have a great pan! They are kind of like making pancakes? Hope that helps and they are a success 🙂 Allie x

    Tried these out today, they’r nice but a little too much dough and a bit bland. I ended up trying again with half the amount of flour than advised in the recipe so got more corn & salmon, figured that’d be healthier for my toddler than just lots of dough. Then added a small amount of chopped fresh parsley, pinch of salt and a very small handful of finely diced spring onion to add more flavour, my little tot seemed to like it better after that

      Hey Fiona, they would probably work fine without the egg. Other idea’s (I haven’t tried these myself but a few people on our Facebook page mentioned they use them)… mixing 1 tablespoon ground flax seed OR chia seeds mixed with 3 tablespoons hot water and left to soak for a few minutes can give you a sticky consistency similar to 1 egg.     Hi will this work without creamed corn? I know it’s easy to make but i was planning to just throw a tin of corn in there?

      Hi Diana, I am not sure as I haven’t tried it myself. I would suggest adding a bit more milk for moisture as the creamed corn is almost liquid. Let us know how you go 🙂 Ax

    Coincidentally I just made these tonight without creamed corn! I’m not keen on the stuff. I substituted mashed berlotti beans with a small amount of sour cream for consistency. I also added very finely diced parsley which I sneak in wherever I can. Sensational! I think this is one of those dishes where the potential combinations are endless once you’ve made them once. And yes, very happy I made spares to eat at my desk at work tomorrow! Nom nom nom!
