Pick-n-Mix Fritters

My best friend gave me this recipe idea as her toddler (and husband) just loves them. I made a batch and gave them to Harry and he was all over them, ripping them apart with his fancy new teeth. They are called pick-n-mix because you can make so many variations. Love ’em.

Nutrition Note:  Offering different flavours and ingredients encourages variety, important for good health, and helps keep fussy eating at bay.

Pick-n-mix
(use as many of these fillings as you want)

Ingredients

  • 1 x 125g can of salt reduced creamed corn
  • 1¼ cups plain flour (try wholemeal)
  • ½ cup milk
  • 2 eggs
  • 1 tsp baking powder
  • Olive oil to fry

Method

Step 1

Whisk milk and eggs together -

Step 2

Add other ingredients and mix until you have a smooth batter -

Step 3

Add mix-n-match filling - or another 125g creamed corn -

Step 4

Heat frying pan (medium) with oil, dollop tablespoons full of batter into the pan and cook each side until golden -

    p.s I have used wholemeal too, turns out a little less fluffy but much healthier.

    Hi Allie, what age would you say these are suitable for? I find my 11mkntg old is good eating bits of bread or strawberries but anything bigger and most ends up on the ground or hidden down the sides of his high chair!

      Hi Emma, Thanks for your comment. I am reluctant to give you an exact age as every child is so very different 🙂 Harry started finger foods quite early so he was eating these around 9 months. I have had a few mums contact me recently with varying ages enjoying them 10, 11, 16 months. I hope that helps Ax

      My 9 month old love s these. I make them very small (so we make around 40) and he munches on them as part of lunch or a snack when we go out. I freeze the left overs so that there are always spares isomers on hand when we need them.

    These are so quick and easy and also very delicious. I put some smoked salmon, grated carrot, zucchini, broccoli and cheese in these. Yum yum yum… I’ve also made them with ham, tomato and basil.

    My 10 month old inhaled these! But I regret making them, because now it’s the only thing she’ll eat (and grapes). Lucky I made two batches!

      Hi Mili, the creamed corn adds moisture, so you could try adding a little more milk or moist grated veggies to the mix. These are pretty adaptable so you can’t go too wrong 🙂 Ax

    Hi there! What could you use instead of milk as my little one is under one so can’t have cows milk yet?! Might sound silly but could you use formula?? Loving your website by the way 🙂

      Hi Wendy,
      How old is your little one? You can use cow’s milk in cooking and for use in cereal etc for children under 12 months. It’s just important cow’s milk doesn’t become their main drink under the age of 1 and that you continue breast milk and/or formula – which appears to be just what you are doing 🙂 Oh and it’s not silly you could easily try formula if would like.     Just wondering if I can make the batter the night before and leave it in the fridge for the morning, or does it have to be made and then used almost immediately?

      Hi Naomi,
      Yes, if you wanted to prepare these the night before I would suggest making the batter and in the morning add your chosen pick n mix ingredients just before frying. I hope this helps. Enjoy, Jx

      Yes, the creamed corn is part of the base of the recipe and then you can pick n mix any additional veggies into the mix 🙂 Enjoy, Jx

    These are great! My daughter loves them. I also make a variation without the creamed corn using eggs and a little flour to make like a thick pancake mix. They are great with cold roast meat in them chopped up too (awesome lunch box food for any age! Often used as a paddock lunch on our farm :))

      EGG REPLACER: here are a few that our readers have recommended.

      Bananas (1 ripe banana=1 egg)
      Apple puree (1 tbsp=1 egg)
      Egg replacer powder
      Mix 1 tablespoon ground flax seed with 3 tablespoons hot water and leave to soak for a few minutes.
      Mix 1 tablespoon chia seeds with 3 tablespoons hot water and leave to soak for a few minutes.

    Do you freeze these cooked or do you freeze the uncooked batter mix?
    If freeze cooked do you just microwave before serving? Don’t want to offer soggy fritters… 🙂

      Hi Gina, I cook and then freeze. These are more of a pancake texture anyway, so the kids still enjoy them :). You can defrost in the fridge and microwave, serve cold, or reheat in the oven or on the frying pan. So many options! Ax

    Thanks Allie! These are delish! My kids loved them, miss 7 months had a go, mr 3 wolfed them down. Made them for an adult brunch with the 250g of cream corn, served with avocado salsa, smoked salmon and aoili! Yumo!

    I made these for my 7 month old and she absolutely loved them, I used the leftover Christmas ham through them with veggies. I had to slow her down as she was trying to stuff the whole thing in her mouth. I also made some larger ones for my toddler.

    This is a great recipe. I triple the base add add various mix ins for variety. I cook them for 25 mins on 180 Celcius in muffin trays then freeze them in Ziploc bags. Defrosting them makes for an easy part of a toddler lunch. I find baking them leaves me with less clean up and less burnt fritters haha. Thanks for another great recipe!
