Anzac Biscuits

Our Anzac Biscuits have around half the sugar and butter than typical recipes, but you wouldn’t know it – they’re yum! The perfect mix of chewy and crunchy. We hope you enjoy your Anzac Day.

For Harry, I like to make an apple crumble with the biscuit – I stew one apple, pop it in a ramekin, crumble 1/2 a cookie on top and serve with a little custard. He loves it.

Ingredients

  • ¾ cup plain flour
  • ¾ cup desiccated coconut
  • 1 cup rolled oats
  • ½ cup sugar
  • 100g butter (or 1/3 cup canola oil)
  • 2 tablespoons golden syrup
  • ½ teaspoon bicarbonate of soda
  • 1 tablespoons boiling water

Method

Step 1

Preheat oven to 150 - 160°C -

Step 2

Add flour, coconut, oats and sugar in a large bowl and stir to combine.

Step 3

Melt butter (or oil) and syrup together in a saucepan over medium-low heat. -

Step 4

Mix bicarbonate of soda and boiling water and then add to the melted butter and syrup. -

Step 5

Gently mix wet ingredients with the dry. Place tablespoonfuls of mixture on a lined baking tray. -

Step 6

Bake in slow oven for 15 – 20 mins, or until golden brown. -

    Love this recipe. Used 1/2c brown flour & 1/4c white. Used spelt flakes, 10-grain mix, flaxseed & chia in place of rolled oats. My twins gobbled up 5 bikkies each for morning tea.

    Love this recipe but I was feeling a little nutty today so I have replaced some of the coconut with 1/4 cup hazelnut meal & a tablespoon each of chopped almonds, chia seeds & linseeds! Also I used whole meal flour, 1/2 brown sugar & 1/2 white …they are so incredibly yummy I don’t think they will last long 🙂 Love all your recipes by the way & the magazine is amazing 🙂

    These are so delicious that I made them again this week after trying them last week. I used a little less sugar this time (1/3 cup instead of 1/2 cup) and snuck in 1 cup of spinach chopped super fine (no one even noticed!) because I like to be sneaky like that. Will definitely make these again.

    I tried to make these but they didn’t work out, the mixture was way too dry and crumbly to form into biscuits, I don’t know what I did wrong ….

      I found the same – added some extra hot water to some of the mixture and ended up with a softer biscuit.

      I experienced exactly the same. Had to almost double the fat. They tasted delicious and kids loved them but rally feel that I did something wrong. Would use less sugar next time and hope to use less fat!

    Used spelt flour and a third of a cup of coconut sugar and also added a handful of sultanas to the mix. Yum! Whole family loved including 18mo. Will make these again definitely.

    Thank you for this recipe! I made it it honour of Anzac day and modified the recipe a little bit.
    I added finely grated carrot, sultana, dates & dried apricot for my little girl and she loved it.
    Do you know if it’s possible to freeze these biscuits? Thank you!

    I’m not normally one to comment on a recipe – but these are fantastic. To find delicious dairy free Anzac biscuits is so good! They taste amazing and were so easy. I did have to add a small amount if additional water – but thank you for sharing

    The best anzac cookies recipe ! Mine is chewy but crunchy, just perfect. I gradually pour the wet to dry while mixing. I think 1/4 wet ingredient left. I use abit less sugar. They are demolished at once. Thank you !

    Is 100g butter 1/2 a cup? Made these the other day and they were perfect, made them today and they didnt turn out aswell wondering if its the butter?
